Ofter I see grey boxes with quotes from previous thread that are preceded by who is being quoted.

    How does one do that?

Right, the "Reply" button (on the original message) automatically quotes that message.
But to save bandwidth and to make things a bit more compact and understandable I suggest to edit also the quoted part.
Quotes are started with "quote" in square brackets and ended with "/quote" in square brackets.
(I have to describe it because the board would use it as a command if I try to post it "as is")
So you easily may cut a quoted part in sections by inserting the commands.
Google for BBCODE (Buletin Board Code).

Fantasmo is quite right. If the quote is small then click on Reply. If it is big then simply type in the reply box. There is also nothing to stop you from copying and pasting parts of a quote. If everybody keeps hitting Reply then the thread soon becomes untidy. Bandwidth however is more affected by people posting full size pics instead of the thumbnail...I've been guilty of that!! Please remember that ImageMaker has to pay for this site and if we can keep bandwidth down then that will help in a small way to keep costs down.

OK, I'm going to try some of this. Don't yell if the site blows up.

The "bandwith" statement was rather meant as "useless payload, to be avoided". A few chars don't make a difference.
And as far as Imagemakers costs are concerned: I like this forum, so I got paying member of Cruxdreams. Not primarily because of the content there, but just as a contribution to what it costs (both in hosting and labour cost!) to operate this site here.

You can also delete parts of the quote for brevity or emphesis. Just highlight & hit delete just like in a Word document.
And, unlike some other forums, this one has undo/redo option (the little blue arrows at the top right), incase you want to restore part of the quote.
