Well, to avoid the reflux of "digestive xenophobia" one might recommend a nice salad, with perhaps a yoghurt-based dressing, and perhaps some sort of fibre (wild rice is very much in vogue).
As to the disgust reflex, that is all in the seasoning and presentation. I would note that a steak does not actually resemble a cow. 
Okay, maybe that. It is true that we are less knowledgeable about the Indigenous history of this continent, having started "history" when Europeans arrived. We're only now beginning to find out about a lot of pre-European Canada.
